Mini Pizza Bites (High-Protein!)
Looking for an easy, meal-preppable breakfast that’s packed with protein to keep you full throughout the day? Try these mini pizza bites made with a cottage-cheese dough that’s customizable to your favorite toppings!
Ingredients:
- 1 cup all-purpose flour 
- 1 cup cottage cheese 
- 1 tbsp garlic powder 
- your pizza base of choice: pesto paste, tomato paste, bbq sauce, etc. 
- your pizza toppings of choice: grounded sausage, onions, peppers, pepperoni, mozzarella, sun-dried tomatoes, etc. 
Equipmemnts:
- Baking tray 
- Aluminum foil 
- Mixing bowl 
Instructions:
- Preheat oven to 350 degrees F 
- Mix flour, cottage cheese, and garlic powder in a mixing bowl 
- Knead mixture together until dough forms [NOTE: sprinkle more flour into the dough and on your working surface as you knead as the dough will be sticky as the cottage cheese starts incorporating] 
- Split dough into 16 pieces 
- Form each piece into a round ball and press flat from the center outwards to ensure your pizzas don’t turn out with a thick center [NOTE: aim for thinner middle and thicker outer disc] 
- Spread your choice of sauce base on each disc and top off with your choice of toppings 
- Line baking tray with aluminum foil and place mini pizzas across the tray, making sure they’re not touching each other 
- Bake for 10 - 12 minutes and enjoy!
