Homemade Salmon Poké
I used to think good poké was something I could only find in Hawaii or Seattle… but in reality - it’s super easy to create and with only a couple of ingredients! This salmon poké recipe takes about 10-minutes to prepare and packs in a ton of protein in one meal!
Ingredients:
- 1 salmon fillet, about a pound 
- 2 tsp sesame oil 
- 2 tsp rice vinegar 
- 1/4 cup soy sauce 
- 2 tbsp sweetener (I use monkfruit) 
- 1 stalk of green onions, chopped 
Instructions:
- Cut salmon fillet into bite-sized squares 
- Transfer salmon squares into a mixing bowl 
- Add the rest of ingredients and mix well 
- Plate your bowl (recommended options: chopped Romaine lettuce, edamame, picked cucumbers, avocado, corn, crispy fried onions, and furikake) 
Notes:
- When shopping for salmon, sashimi-grade salmon will be your safest choice when creating this recipe. However, I’ve also made poké from farm-raised salmon as farm-raised salmon don’t go through the migratory cycles that wild-caught salmon do, which significantly decreases the potential of contracting parasites. Of course, eat at your own discretion! I’ve personally never gotten sick from consuming farm-raised salmon raw. 
- This recipe creates a soy-based poké - you can turn it into cream-based poké by adding 1/4 cup of Kewpie mayo and mix in as much tobiko (flying fish roe) as you’d like for a richer and creamier take on poké!
