Spicy Salmon Poké Inari Sushi
An explosion of flavors and textures all in one pocket! Could be eaten as a savory snack or an entire meal - either way, you will surely feel full and satisfied after eating it. This is a colorful twist on the traditional, typically rice-filled Inari sushi where we cut out half the rice and top it with a ton of veggies and proteins!
Ingredients:
- 1 can of seasoned bean curd (or Inari, may also come in a packet) 
- 5 oz salmon, cubed 
- 1/2 tsp soy sauce 
- 1/2 tsp sesame oil 
- 1/2 tsp Sriracha (or more, if you like it more spicy) 
- 1 tbsp mayonnaise (regular or Kewpie both work!) 
- 1/2 stalk of green onions, chopped for garnish 
- Fish roe (tobiko) for garnish 
- Multigrain rice (recipe here!) 
Instructions:
- Cube up the salmon 
- Add soy sauce, sesame oil, Sriracha, and mayonnaise to the salmon and mix thoroughly 
- Open Inari packet and drain the sauce 
- Layer Inari pouches halfway up with rice then top off with the salmon mixture 
- Top off with green onions and fish roe 
- You can make a colorful assortment of Inari pouches with cucumber salad, seaweed salad, corn salad, or even egg salad!
