3-Ingredient Healthy Matcha Mousse
I know it sounds crazy to make desserts out of tofu, but it’s literally the star of the show for this 3-ingredient matcha mousse recipe! Not only will it satisfy your sweet tooth, it’ll also help you hit your protein goals for the day.
Instructions:
- Melt chocolate chips either with double boiler method on the stove or in the microwave (if microwave, do so in 10 - 15 sec increments so to not burn!) 
- Sieve matcha powder onto the melted chocolates 
- Combine silken tofu and matcha chocolate into the blender and blend on high for 45 seconds 
- Transfer mixture into an air tight container and refrigerate for 2 hours before serving 
- Add toppings (e.g., strawberries, granola, sliced almonds) and enjoy!
