2-Ingredient Mango Sorbet

SUPER simple mango sorbet recipe, requiring only 2 ingredients and absolutely no churning involved! So easy, satisfying, and will 100% cool you down in the heat of the summer.


Most mango sorbet recipes you’ll find out there calls for lime juice and your choice of liquid sugar to create this glorious summer treat. But my childhood treats involved a lot of mango and Yakult combination, so I figured this couldn’t go wrong! Yakult is a probiotic beverage (you could call it a type of yogurt drink) originating from Japan. It differs from other yogurt drinks in that it’s not creamy - it simply carries a tart and tangy taste, which makes it so much lighter and easier to ingest. Growing up in Taiwan, snack time involved everyone retrieving their own bottle of Yakult from the canteen everyday, as it was marketed to improve gut health. Nowadays, I drink it sparingly as one tiny bottle contains 10 grams of sugar (though there is a Yakult “Light” that only contains 3 grams) just to satisfy my inner child. I am not one to take away the joys of childhood away from my children though - so I created this recipe for Zoe and Ivy to enjoy!

Ingredients:

  • 3 fresh, ripe mangos (you can also use 3 cups of already chopped, frozen mangos)

  • 4 bottles of Yakult

Equipments:

  • Power blender (THIS is the one I use)

  • Fruit peeler (I recommend THIS one)

  • Freezer tray (for freezing mango in one layer, can also use a baking tray for here)

  • Freezer-safe container


Instructions:

  1. Chop up mango into small cubes (skip this step if you went with already frozened bag of mangos)

  2. Place mango cubes on a freezer tray in one layer (don’t pile them or your blender will have a much harder time blending them up)

  3. Freeze mango cubes for at least 3 hours

  4. Pour frozen mangos into the blender

  5. Add Yakult into the blender

  6. Blend until you achieve a smooth, creamy consistency

  7. Remove from blender and serve or store in a freezer-safe container
