Raspberry Matcha Banana Pudding

A tangy twist on the popular matcha banana pudding - balancing the earthy tones of matcha with the sweet-n’-tart notes of raspberry! This gorgeous dessert is perfect for your next holiday gathering or for a Wicked-themed party!


Ingredients:

  • 1 box of vanilla pudding mix (family size)

  • 1/2 of a 14 oz can condensed milk

  • 1 1/2 cups water

  • 2 cups heavy whipping cream

  • 4 tbsp matcha

  • 1 packet of Trader Joe’s freeze dried raspberries

  • 2 bananas

  • 1/2 box vanilla wafers

  • Hand-held mixer

  • Matcha sifter

  • Food processor


Instructions:

  1. Mix together condensed milk, water, and vanilla pudding mix in a large bowl and cover with plastic wrap

  2. Cool pudding mixture in refrigerator for 2+ hours

  3. Food process freeze-dried raspberries so it turns into powder

  4. When mixture is ready, whip heavy cream until stiff peaks form then continue whipping in pudding mixture with hand-held mixer (this will create a better texture than if you simply fold in the pudding mixture)

  5. Split up the mixture into two bowls

  6. Sift matcha powder into one bowl then mix well

  7. Sift raspberry powder into the other bowl and mix well

  8. Assemble by layering vanilla wafers, bananas, one flavor of pudding cream mix, then vanilla wafer, bananas, then the other flavor of pudding cream mix in small cups or a large container

  9. Optional: finish off top layer with half raspberry and half matcha pudding cream

  10. Once assembled, refrigerator for 2+ hours before serving
