Ube Shortbread Cookies
For only requiring 4 ingredients, these are surprisingly delightful ube shortbread cookies that melt in your mouth and only takes 8 minutes to bake!
Ingredients:
- 8 tbsp of butter (or one stick) 
- 1/4 cup of granulated sugar 
- 1 cup of all purpose flour 
- 1 tsp of ube extract (or whatever flavor you’re feeling; pictured are made with ube extract, pandan extract, strawberry extract, and vanilla extract) 
- Optional: white chocolate chips to kick the sweetness up a notch! 
Tools:
- Cookie cutter (I used THIS - you can make it whatever shape you like!) 
- Parchment paper 
Instructions:
- Let butter sit out to get to room temperature prior to mixing 
- Combine butter and sugar with handheld mixer until it reaches a fluffy consistency 
- Add in extract of choice 
- Slowly pour in all-purpose flour as you continue mixing 
- Dough will appear crumbly at first; use your hands to knead it until it forms into a ball 
- Roll out the ball out until about 3 - 4 inches thick and press cookie cutter in 
- Line baking tray with parchment paper and preheat oven to 350 degrees 
- Evenly spread out cookies across the baking tray, making sure they’re not touching each other 
- Top the cookies off with white chocolate chips before putting them into the oven 
- Bake for 8 minutes, then let cookies chill in refrigerator for at least 30 minutes for best texture
