Cheesy Tofu Mochi

Silken tofu has become one of the most versatile secret weapons for my family to get their fill of proteins in, and this is just another fun way! Cheesy tofu mochi is not only deliciously chewy but also entertaining to pull apart.


Ingredients:

  • 300 g silken tofu

  • 1 cup potato starch (thin)

  • 1/3 cup shredded mozzarella cheese

  • 1:1 ratio of soy sauce:honey mixture

  • Optional: small nori sheets


Instructions:

  1. Whisk together silken tofu and potato starch

  2. Spray waffle maker with neutral oil (can also directly cook on stovetop)

  3. Top batter with mozzarella cheese throughout

  4. Sprinkle 2 tbsp of soy sauce + honey mixture throughout

  5. Let batter cook thoroughly

  6. Let mochi cool and cut into bite-sizes

  7. (Optional): wrap mochi with nori sheets and enjoy!
