One-Pot Honey Miso Salmon Donburi

One of those fail-proof, quick and easy week night dinners you can whip up without spending too much time in the kitchen! This honey-miso salmon donburi is cooked straight in the rice cooker and hits like a warm hug to your taste buds.

Ingredients:

  • 1 lb salmon fillet

  • 1/4 cup white miso

  • 1/4 cup honey

  • 1/4 cup soy sauce

  • 4 cloves of minced garlic

  • 3 cups short-grained rice

  • 3 cups bone broth or water

  • 1 medium sized sweet potato

  • 1 handful of frozen veggies

  • 2 - 3 tbsp furikake or crushed up seaweed (optional)

Instructions:

  1. Mix miso, honey, soy sauce, and minced garlic together (stir until a thick-ish sauce forms)

  2. Drizzle mixed sauce all over the salmon

  3. Peel sweet potato skin and cut into about 1-inch thick pieces

  4. Wash rice well and drain

  5. Place rice into rice cooker and add chicken broth

  6. Layer frozen vegetables then sweet potato pieces on top of rice

  7. Place salmon on the uppermost level and drizzle remaining sauce all over the top

  8. Cook on high-pressure steam for 20 minutes

  9. Once cooked, break up the salmon and sweet potato and mix well into the rice

  10. Enjoy with seaweed sheets!

This dish pairs perfectly with some seaweed sheets - just scoop a spoonful onto the seaweed and eat it like a taco!
