Instant Pot Braised Beef Noodle Soup
The most heartwarming, cozy bowl of noodle soup - all made in the Instant Pot! You don’t have to wait all day long for that beef to braise - just toss it all in and press a button!
Ingredients:
- 2 lbs of beef shank 
- 3 - 4 medium sized tomatoes 
- 1/2 a minced onion 
- 4 cloves of minced garlic 
- 1/8 cup of regular soy sauce 
- 1/8 cup of dark soy sauce 
- 2.5 tbsp of sugar 
- 1/2 cup of rice cooking wine (like THIS) 
- 2 and a half tbsp of black bean paste (you can find it HERE) 
- 6 cups of beef broth (I use THIS beef broth) 
- 2 cups of baby carrots 
- Flat noodles (however much you’re serving) 
Instructions:
- Chop up 2 lbs of beef shank into 1-inch pieces and slice tomatoes into wedges 
- Turn Instant Pot setting to “sauté” and drizzle some oil before cooking beef shank chunks and tomatoes together for 2 - 3 minutes 
- Add minced onion, minced garlic, minced ginger, black bean paste, sugar, regular soy sauce, dark soy sauce, and rice cooking wine in with the browned beef and tomatoes 
- Stir the mixture as it simmers, then add 6 cups of beef broth and baby carrots 
- Turn Instant Pot to “pressure cook” setting for 45 minutes 
- Boil some noodles til al dente, drain, then combine with the finished braised beef noodle soup!
