Rice Cooker Hainan Chicken
Juicy, savory, and all it takes is the click of a button! If you have a rice cooker, this is a quick and easy weekday meal you can enjoy with the whole family!
Ingredients:
- 12 - 15 chicken wings 
- Marinade: - 1 tbsp turmeric 
- 2 tsp salt 
- 2 tsp sesame oil 
- 4 tbsp water 
- 2 tbsp oyster sauce 
 
- 4 cloves of garlic 
- 1 big knob of ginger 
- 3 bunches of scallions 
- 1 cup of rice 
- 1 cup of salted chicken stock 
- Sauce: - 1/8 cup of minced garlic 
- 1/8 cup of minced shallots 
- 2 bunches of chopped scallions 
- 1/4 cup of neutral oil 
 
Tools:
- Rice cooker (I use CUCKOO’s Twin Pressure Rice Cooker) 
- Aromatics chopper (THIS makes your life so much easier!)

Instructions:
- Wash your rice!! 
- Marinade chicken wings with turmeric, salt, sesame oil, water, oyster sauce; massage well and set aside for 10 minutes 
- Mash up garlic, peel ginger, and chop scallions into big segments 
- Layer everything into rice cooker in this order: rice, salted chicken stock (1:1 ratio rice and stock depending on how many you are serving,) ginger, garlic, chicken, and scallion 
- Set rice cooker to "cook" or "mixed rice" setting 
- Make the sauce while you wait: mince garlic and shallots, chop up scallions, then heat up some neutral oil and pour over the aromatics 
- Once the rice cooker is done, serve hot with dressing and vegetable of your choice
