Mini Scallion Pancakes

Easy scallion pancake recipe that short-cuts all the hard work for you! These are crispy, savory, and perfect for making in bulk so you can enjoy them for a long time!


Ingredients:

  • Wonton wrappers

  • Scallions, thinly chopped

  • Neutral oil of choice

  • Salt

  • 5 spice powder (which is a fusion of Chinese spices like THIS)

Tools:

  • Rolling pin (use a wooden one like THIS)

  • Cutting board with juice grooves (so the oil doesn’t get everywhere while rolling)

  • Frying pan that heats up well (THIS is what I use!)


Instructions:

  1. Let your wonton wrappers thaw for 20 - 30 minutes before starting (you will need 3 wonton wrappers per scallion pancake)

  2. Chop up your scallions finely (honestly, however much you want!)

  3. In a bowl, mix together handfuls of chopped scallions, 1/2 a cup of neutral oil, a pinch of salt, 1/2 tbsp of 5 spice powder

  4. Lay down first wrapper, spoon some scallion oil mixture onto the middle

  5. Lay down another wrapper, spoon some scallion oil mixture onto the middle

  6. Finish up with one more wrapper on top

  7. Using a rolling pin, flatten out the 3 wonton wrappers so it thins out and sticks together

  8. Make tiny, slight cuts 1 centimeters apart across the entire wrapper

  9. Roll the wrapper in where the cuts are, then fold in from one end to the other - creating a snail-shaped “ball”

  10. Using your rolling pin again, roll the “ball” out in all directions until it’s a flattened circle

  11. Heat up your frying pan with oil and make sure the pan is HOT before placing the pancakes in to cook

  12. Fry both sides until slightly browned on the edges and golden in the middle

  13. Enjoy while hot!
