Soy-Sauced Soft Boiled Eggs (溫泉蛋)
Jammy, umami, melt-in-your-mouth kind of boiled eggs. One of the regulars in my weekly meal prep rotation, and it’s soooo easy to make!
Ingredients:
- Eggs (as many as you want to make!) 
- 1/2 cup of mirin (find it HERE) 
- 1/2 cup of soy sauce 
- 1 cup of water 
Instructions:
- Take eggs out of fridge and let them sit until they’re at room temperature 
- Boil water in your kettle or on stovetop before putting eggs in to cook 
- Set a timer for 6 minutes and 20 seconds as you gently place your eggs into the already boiling water 
- While the eggs cook, prepare a big bowl and fill it with ice and water 
- Once your timer goes off, immediately and carefully (!!) transfer the eggs into the ice bath with a slotted spoon 
- Allow the eggs to sit in the ice bath until all the ice melts and eggs are cold to the touch 
- Peel the eggs, then transfer them into a large container with lid 
- Pour in mirin, soy sauce, and water 
- Let eggs soak in flavoring for an hour, turning sides every once in a while to make sure the entire surface area gets soaked 
- Enjoy with rice or noodles - especially in ramen!
