Tocino-Inspired Sweet & Salty Pork
Filipino-inspired sweet and salty pork dish is not only easy to whip up at home but pairs soooo nicely with a heaping bowl of rice!
Ingredients:
- 2 lbs of pork shoulder-butt 
- 1/2 cup of brown sugar 
- 1 tbsp of salt 
- 1 tbsp of soy sauce 
- 2 tbsp of rice vinegar 
- 5 - 6 cloves of minced garlic 
- 1 tsp of black pepper 
- Neutral oil of choice for cooking 
- (Optional): green onions for garnish

Instructions:
- Slice up the pork shoulder-butt thinly (MAKE SURE you have a nicely sharpened knife for this recipe, the key is to slice against the grain and make sure each slice is thiiiiin!) 
- Place pork slices in a big bowl and add in brown sugar, salt, soy sauce, rice vinegar, minced garlic, and black pepper 
- Rub the marinade in thoroughly 
- Cover the marinaded pork and refrigerate overnight 
- On medium heat, cook and simmer each slice, making sure every slice is touching the surface of your pan 
- Add small amounts of water in increments while pork cooks as needed 
- When water is totally absorbed, add small amounts of neutral oil and cook until pork caramelizes 
- Serve with hot rice and vegetable of choice!
