Mango Coconut Jelly

A guilt-free dessert that's somehow both satisfying and good for you. The agar agar texture pairs perfectly with the rich and creamy flavors of coconut milk... and the mango is simply the cherry on top!


Ingredients:

  • 800 mL of coconut milk (typically this is 2 cans)

  • 3 g of agar agar

  • 3 - 4 large mangos

  • 2 - 3 tbsp of monk fruit sweetener

Equipments:

  • Medium pot

  • Spatula

  • Clear, food-storage container with air-tight lid


Instructions:

  1. Cut up mangoes into bite-sized cubes then set aside

  2. Mix together coconut milk, monk fruit sweetener and agar agar (use spatula to break apart the clumps of agar agar)

  3. Transfer mixture to the stove and bring to boil once

  4. Allow mixture to simmer a bit until every bit of agar agar has dissolved

  5. Let mixture cool for 10 - 15 minutes

  6. In a clear, food-storage container, cover the base with all the cut-up mangoes

  7. Pour coconut mixture onto the mangoes and cover with lid

  8. Carefully move container to the refrigerator and let it settle for 30 minutes to an hour or until firm

  9. Cut up into cubes and enjoy!
